The limit depends on your system resources. We advise to keep the number below 1000 - otherwise you risk your system will start slowing down. If you need more fonts, try a font manager where you'll be able to activate just the fonts you currently require.
The recipient can see only see the fonts currently installed on his computer. In case he doesn't have the font you used, he'll see a default font instead. We advise to use standard system fonts when composing an email.
